Introduction


The Castronovo Sierra Nevada Colombia 72% dark chocolate is crafted from cacao grown in the Sierra Nevada de Santa Marta region of Colombia. This unique area is home to the world’s tallest coastal and glacial mountain, encompassing all of Earth’s biomes. The cacao is cultivated on small agroforestry farms, working towards biodiversity preservation despite the challenges posed by palm and banana plantations.


In 2019, Denise Castronovo met Pedro Bolivar, a third-generation cacao farmer who is passionate about his craft and describes it as being “in his blood.” This bar is a tribute to the dedication and skill of these farmers, showcasing the rich, complex flavors of heirloom cacao from this special region.

  • Maraschino Cherry: Adds a vibrant, fruity tartness with sour notes that contrast beautifully with the nutty and spiced base, creating a lively and dynamic layer.

  • Purple Forest Guava: Offers a combination of tannic and acidic qualities, balanced by subtle tropical hints of pineapple and berries, adding an exotic dimension to the bar.

  • Rose Hips: Blends floral, sweet, and tangy flavors, evoking tart apples, cranberries, and plums, with a distinct tangy aftertaste that elevates the fruity elements.

  • Light Caramel Sweetness: Complements the profile with a soft, delicate sweetness, rounding out the flavor without overshadowing other notes.
